Who cares about lemons when you have awesome fruit like pears in the fridge! I don't want lemonade, I want PIE!!! Hahaha, but really though, I love me some desserts and it's so hard to find ones out in the world that aren't going to kill my healthy eating style. Super sad face about that...so the solution: make it myself, I guess?
After a lot of random recipe reading and mental "healthy substituting" over the last year, I somehow just managed to wing this one in the kitchen last night. Luckily, it all worked out just fine, tee hee (I wouldn't bother posting if it had turned into a disaster, just so you know :P). Anywho, the recipe is completely "clean" as the health buffs like to put it, meaning that there are no processed sugars or chemicals added to this recipe. I think the most processed this in the recipe is the protein powder I used, but even that can be replaced if you don't have any. So have fun, make pie!
I'm not a vegetarian; I love eating meats too much. BUT I can definitely appreciate vegetarian and vegan dishes because they tend to err on the healthier side of the culinary spectrum. It can't hurt to mention that I've never met a dedicated vegetarian/vegan that was overweight or riddled with health problems, so they must be doing something right!
SO in honor of all the vegetarians/vegans out there, I sometimes decide to observe what is commonly referred to as Meatless Monday! Today's Eggplant Tofu Ragout (pronounced rag-goo) recipe goes along with that idea and is completely meatless; although, it's packed full of delicious veggies and a healthy source of plant protein!
YAY! I finally got my computer looked at! Aaaand...it turns out it was my internet being wired wrong and not my laptop that was messing my life up (>_>). Anywho, the point is that me and my posts are back in action! Although, I've realized that posting everyday is not something that can last...SO I'm switching to posting once every other day or so---less stress for me, less reading for you folks out there. (^_^)
Anywho, while my lil laptop was out of commission, the weather here in Hawaii has started transitioning from winter rainy season to sunny skies!! LOVE the weather shift because I dislike cold, windy, rainy days, and also because I love frozen goodies like the one in the picture: Banana Split Protein FroYo Popsicles! I love the strawverry, banana, and chocolate flavors all swirling around together, YUUUUM!!! XD
Sadly something seems to be wrong with my laptop's ability to connect to wifi of any sort...so unless I find time to camp out at a Starbucks or something, putting up new posts will be less frequent than before. It is a sad, sad day. Oh the sorrow...(T_T)
